
This is one of my favorite desserts! I thought I'd share it on the blog since I love it when others share fun recipes...
(okay, this isn't a picture of this actual pie, but the closest I could find! I like to cover the whole top with the whipping cream)
12 Saltine crackers, finely crushed
3 egg whits, beat until thick and stiff
1 cup sugar
1/2 cup finely chopped pecans
1/4 tsp baking powder
1 tsp vanilla
4-5 peaches or 1-2 big cans of peaches
Whipping Cream
Beat eggwhites until thick and stiff. Slowly beat in 1 cup sugar. Add Saltine crackers. Add pecans. Add baking powder and vanilla.
Butter Pie Plate, bake 350 degrees for 30 minutes.
Cool.
Slice peaches into it.
Put Whipping Cream on top.

Seriously...is this the pie you brought to me when I had Kimball? It was TO DIE FOR! I have been wanting the recipe ever since I first tasted it. I can not wait to make it!!!
